Fruit Salad with Honey Citrus Vinaigrette

Toss this tangy, sweet citrus vinaigrette over your favorite fruits for a delightful addition to your brunch buffet or as a quick snack later.

Ingredients:

Fruit Salad:

  • 1 cup sliced strawberries

  • 1 cup blackberries

  • 1 cup raspberries

  • 1 cup blueberries

  • 2 sliced kiwis

  • 1-2 sliced bananas

  • 1-2 little cups of canned mandarin oranges (use fresh, peeled if you prefer)

  • 1 cup sliced pineapple

Honey Citrus Vinaigrette:

  • 1/4 cup honey

  • Zest of 1/2 lemon

  • Zest of 1/2 orange

  • 2 tbsp fresh lemon juice

  • 2 tbsp fresh orange juice

  • 1 tsp chopped mint, if desired

Instructions:

Use any fruit you like. This is the list for the fruit pictured here. I’ve also made with peaches, melon, apples, cherries, grapes, etc. You really can’t go wrong.

Cut the fruit into bite-size pieces, relatively the same size. I don’t cut blackberries, blueberries, or raspberries. In the end you’ll need 6-8 cups of chopped fruit.

Pro-tip: If you’re in a hurry, grab a container of precut fruit from the grocery store and chop smaller, if needed. Then toss with other fresh fruits and the vinaigrette. I usually do this with the pineapple.

You can also add chopped pecans or walnuts for a lil crunch!

Add the chopped fruit to a big bowl and toss with the vinaigrette. Serve chilled within a day. Enjoy!
